Tacos on the trot

These can be served with or without the hot mince

4 single-serve bags of corn chips
1 cup grated cheese
1 cup shredded lettuce
1 tomato, cut into chunks
1 jar salsa – mild, medium or hot
1 cup cooked taco mince (optional – see below)
Sour cream


  1. Open each bag of corn chips and toss in one-quarter of all the ingredients, except the sour cream.
  2. Give it a shake to mix.
  3. Top with a dollop of sour cream and serve in the bag – with a spoon.

If you have the time to quickly fry up some mince with a little chopped onion and taco seasoning mix, the result will be even better.
