Anthony, better known as ‘Chef Macca’, has been travelling the outback, the coast and all places in between since 1980. He first visited Uluru just seven days after Azaria Chamberlain was taken by a dingo. That trip gave him a thirst for outback travel that shaped his youth and continues to do so to this day.
All of Chef Macca’s early work in sales and marketing was in the outdoor travel sector, and when it was time for him to spread his wings and begin his own remote area catering and expedition guiding business, he never looked back.
Chef Macca has guided and catered trips for the Australian Geographic Society, most major car brands and even Variety Club gigs. His career has seen him on the road for up to 10 months of the year, travelling all over Australia. Throughout the years Chef Macca has regularly contributed to a range of well-respected outdoor and 4X4 magazines, and has been highly sought after as a cook and guide for bush-based editorial content trips.
Chef Macca’s wealth of knowledge of Australia’s lesser-known tracks, his happy disposition coupled with a can-do attitude and his ability to a tell a great yarn around the campfire has earned him a great deal of respect in the industry. Or was it his ability to feed people seriously delicious food that won him favour? We can’t be sure, but what we do know is Chef Macca is a down-to-earth bloke with a glint in his eye, and is the perfect host for RV Daily’s Foodie Trails.
